We almost had to evacuate the aparment from the smoke, but totally worth it. I’ll be making these as soon as I can get my hands on some flour tortillas here in Spain…. If you put the tray in to heat up before putting the oiled cauliflower on it, you can get really great color and flavor! I used little six inch corn tortillas and made a big ol’ mess when I tried to flip these in a skillet as much of the filling tumbled out. Just roll it around every few minutes so that it easily chars. I would never have thought to put cauliflower in a quesadilla, but what a great idea! Heck yeah! Margit — Not everyone agrees that olive oil isn’t good for frying. that’s just how i roll. My only question is using olive oil in frying the cauliflower since it has a low burning point.
